I'm doing ok today @StuF just emerging from my siesta and am about to roast some beetroot to cook some beetroot waffles. I make them in bulk and then seal in plastic zip lock bags to freeze and just get them out of the freezer for breakfast when I need them. They freeze beautifully and when you reheat them they come up well. I use raw honey from a local bee hive to drizzle over my waffles. How did group go today btw? Did the psychiatrist make an appearance and what did you talk about today in group?

Not heard anything from job application. They must be slow readers re their info request. Not looking good. Well they do like to take their sweet time tho (ie no concept of actual work, which is why I am trying to get into it ha ha ha lol)

@StuF @TAB Had to find a gluten/egg free option that wasn't gritty to make the beet waffles with. Almond flour can be a bit like that but chickpea flour seems to have a better texture. Have made them before many times and no they don't turn out pink!
Might look into getting oven silicone moulds as it takes forever waiting for individual waffles to cook in the iron. I used to use Lankanto no sugar spike 'maple syrup' but it had citric acid in it so now buy raw honey from the local farmer who also sells honey and baking flour when you order.
I found out lots of honey in supermarkets are a scam ie. Byron Honey which isn't made in Byron Bay as the name suggests but made overseas with a fancy label on it indicating its local from a trendy local eco-farm or something. That is what an apiarist told people on facebook so I buy local honey now.

waffle iron has to heat up first ? seen people using them, takes ages,but once hot stays hot
@SmilingGecko yeah I got 'local' labeled honey at vietnamese bakery. it was sugar syrup. just foul no taste except sweet people add sugar to cheap honey as its ..cheaper .. I get Foodland, its good plus cheap. no one seems to buy it so it goes solid in jar, yum

@TAB Yeah lots of shenanigans going on in apiaries to cut costs. This honey I get is made by bees in the hills where there are eucalypts and clover. The bees are non migratory so you get a snapshot of the area per season and no seasons honey tastes exactly the same as the other. It just depends where the bees go. These apiarists started out only with a small number of hives and now they have quite a lot and have a loyal customer base. I hope they don't close down, it would be a shame, but their honey is robust and sweet. I used to buy raw honey from the shops but this honey looks a lot darker and is thicker.

@TAB the waffle iron heats up and light changes color but it takes about 10 minutes per waffle. I'm doing them now inbetween typing to you. I just put the egg timer on and let them cook. Nothing much on for the rest of the day. How is your cough going? Is it still causing you trouble? I hope you can get some much needed sleep tonight. I dunno what it is but us seniors have sleep issues generally. I drink an aboriginal tea that is sedating and relaxing. Its a lot cheaper than mel*****nin.
